I heart macaroons! French or coconut, I swoon over their deliciousness. Because these little treats are hard to come by locally here, I decided to attempt the art of making these bad boys in my kitchen eek! So….I found what appeared to be the simplest recipe from Williams-Sonoma and gave it a go! And then had a little fun jazzing up these scrumptious little nuggets for Easter with colorful Cadbury eggs!
Okay, I have to admit, my first batch was a TOTAL flop. They looked more like a pancake the first round, but I tried again and found a few key things: be sure to beat egg whites pretty good before incorporating with other ingredients and do refrigerate mixture for a good 30 minutes before sticking in the oven.
Here is the recipe from Williams-Sonoma:
3 1/2 cups sweetened shredded dried coconut
3/4 cup sugar
5 egg whites, lightly beaten
1 1/2 tsp. vanilla extract
1/4 tsp almond extract
8 oz. bittersweet or semisweet chocolate (I used morsels)

And maybe a few Cadbury Eggs too : )
